Since the morning is always a hectic time for my family (no matter how early we get up!), a breakfast that I can grab on the go is key. My sister recently introduced me to these Breakfast Balls. They are so easy to take with you when heading out the door. Check them out for yourself!
Ingredients
1 cup of (dry) oatmeal (old-fashioned oats)
1 tablespoon of chia seeds
2/3 cup of toasted coconut flakes
1/3 cup of honey
1/2 cup of peanut butter
1/2 cup of toffee bits
1 teaspoon of vanilla extract
Directions
First take your coconut flakes and lightly toast them. There are two ways you can do this. You can “dry fry” them in a pan over low heat until they are golden brown. Or you can preheat an your oven to 350 degrees, and bake them on a foiled covered baking sheet for 5 to 10 minutes. Just make sure you check on them every 2 to 3 minutes (and give them a good stir!) so they don’t burn.
Then combine all your ingredients into a mixing bowl.
Make sure you stir well! You want all the ingredients to be combined evenly. This will make a nice batter to then roll the balls.
Now take a tablespoon and roll together individual oat balls. You may have to gauge stickiness as to whether you need to add more peanut butter or not. However with the amounts listed above, my sister’s batches have always turned out fine.
Then place the balls on a baking sheet lined with tin foil.
Next you will want to place the breakfast balls in your refrigerator for fifteen minutes. After that, they are good to go!
There you go! A simple and easy breakfast to create. And the best part? As I mentioned, you can just grab them on the go!
