During the holidays it is one of our favorite type of gatherings. Usually my mom makes an egg bake, using my sister in law’s recipe, while either my sister or I bake a sweet accompaniment or some sort of yummy treat. One of my favorite types of recipes to bake are scones!
Now since it is officially fall, you know what that means… Pumpkin flavored treats are everywhere, and I’m loving it! This means that every morning when I wake up, I can start my day off right: with pumpkin flavor in my coffee. Coffee is definitely part of my morning routine and I recently started using International Delight flavored liquid creamer. They have an amazing line of holiday themed flavors, including Pumpkin Pie Spice. What better way to match delicious scones with comforting coffee than tying it together using the same flavored creamer in both recipes?So in preparation of the holidays, I’m getting in the festive mood with holiday flavored coffee, and holiday themed baked goods! As I mentioned above, pumpkin flavors are quite hot right now! I actually made pumpkin flavored scones the other day for my friends and they loved them. So why not make the same scones for my family come holiday season?

Pumpkin Pie Spice Scones
Ingredients
1/2 cup of International Delight Pumpkin Pie Spice flavored liquid creamer
2 1/4 cups of flour
1/3 cup of brown sugar
1 egg
1 tablespoon of baking powder
1 teaspoon of ground cinnamon
1/4 teaspoon of cloves
1/4 teaspoon of ground ginger
1/2 cup of sliced butter
3/4 cup of canned pumpkin
1 1/2 teaspoons of vanilla extract
Directions
First let’s preheat the oven to 425 degrees. Then you’ll want to mix together your dry ingredients: flour, brown sugar, baking powder, cinnamon, cloves and ginger in a large mixing bowl.Next cut ½ cup cold butter into slices and and add them into the mixture. Use a knife to cut the butter even more while blending it into the flour. Then add the canned pumpkin, egg, and vanilla into the mixing bowl.
Stir that up! Then pour in a 1/2 cup of International Delight Pumpkin Pie Spice flavored creamer. Start to mix with a fork.
Please remember not to over mix the dough! These are scones, so if you do so, you run the risk that the scones will come out hard.
Now if you have a scone baking tray, divide the dough into that. Make sure you grease it first! If not, cut the dough into two pieces, and then diving each piece until you have 8 wedges total.
Bake the scones for 14 to 16 minutes until golden brown. Let them cool, and remove from the tray.
Then of course you serve the scones with your pumpkin flavored coffee! Just biting into one of these delicious scones makes me excited for the holidays, and to have my family gathered around the breakfast table once again.
I absolutely love that I was able to purchase everything I needed for this recipe at my local Walmart, at great low prices. I found the International Delights Pumpkin Pie creamer, along with a variety of other holiday themed flavors, in the Dairy section. Just look in the large refrigerated display bins for the creamers.
