Now with Mother’s Day coming up, I was trying to come up with brunch ideas and recipes to serve. While doing my research, I easily became distracted and started watching movie trailers instead (story of my life!!). After a viewing of the trailer for Disney’s The Lone Ranger, I suddenly became inspired to create something southwest style.
My mom loves food that is spicy with pepper, so this would be right up her alley. Inspired by other cheesy pies I’ve made in the past… Here is the recipe for the Cowboy Cheesy Pie! Perfect for a Sunday brunch, lunch, dinner, or just any time you are in the mood to make something spicy for your little (or big) cowboy!
Ingredients
frozen hash browns
2 tablespoons of butter, melted
3 eggs
1 cup of shredded Monterey Jack cheese
1 or 2 small jalapeño chiles
1 red bell pepper
1/2 teaspoon salt
2 tablespoons of all-purpose flour
2/3 cup milk
Directions
First you’ll want to pre-heat the oven to 375 degrees. Then chop your jalapeno and red bell pepper into small pieces. Just a warning, you should wear gloves when chopping a jalapeno! The jalapeno oil can stay on your fingers despite washing and that’s not always a pleasant experience. If you don’t like your food spicy, you can skip the jalapenos and just double your red bell pepper. Make sure you have at least a 1/2 cup of peppers to add to the pie.
Now here’s a hint with the potatoes. I usually pick up Simply Potatoes Southwest Style Hash Browns. This will give your pie an extra kick to it! Now take your potatoes and mix them together with the melted butter and a slightly beaten egg. Next press potato mixture on bottom and up side of ungreased pie plate (preferable 9 x 1 1/2 inches if available). Bake the potato crust for 20 minutes.
After the crust has finished baking, go ahead and reduce the oven temperature to 350 degrees. Take the flour, salt and 2 eggs. Beat them in a bowl together until blended. Then proceed to pour in your milk while stirring. Mix well!
Sprinkle half a cup of cheese onto the crust. Then sprinkle on half of the chopped peppers on top of that. Feel free to repeat if you wish! Now take your flour mixture and pour it on top of the cheese and peppers. If you have remaining cheese and peppers, sprinkle those on top of the flour mixture.
Place your pie in the oven and bake about 35 minutes. Make sure the center is set and the top has a slight golden brown. The important part though is after baking, let the pie stand and cool for at least 10 minutes before slicing and serving. Don’t worry, it will still be warm!!
You can garnish the pie with sour cream, lettuce, or even more peppers! I prefer the cheesy pie just plain and simple. Enjoy!!
