I admit, during the week, my mornings are rushed! I’m a working mom so I always feel like I’m short on time getting myself ready for work, and my son ready for school. Coffee is always a must to keep me going! Right now I love adding Simply Pure Creamer by International Delight to my daily cup. As soon as I spotted this creamer in Walmart, I fell in love!
Simply Pure contains only five simple ingredients, including real milk, cream, and sugar. It also come in three delicious flavors: Vanilla, Caramel and Hazelnut. I always need to enjoy at least one cup of coffee on my way to work. Simply Pure adds that delicious flavoring that my coffee needs!
So when thinking of the concept of simple ingredients… Simply Pure inspired me to create delicious breakfast dishes that include just that. Simple ingredients. I may not always have time during the week to relax and cook a yummy breakfast, but I certainly can on the weekends! What better way to enjoy my daily cup of coffee than with a “simply pure” simple breakfast?
The recipe that popped into mind was an egg bake! Hot eggs + hot coffee = win win. Perfect way to wake up and get your day going!
Plus I just love how simple egg bakes are to create. All you need are eggs, and then a few key simple ingredients. I decided to go with turkey bacon, and a few fresh veggies such as spinach, tomatoes, and mushrooms. Since I just love cheese, I couldn’t resist adding in some crumbled goat cheese as well.

Ingredients
8 strips of turkey bacon, chopped
1 tablespoon of olive oil
2 cups of fresh spinach
1 cup of mushrooms
1 cup of diced tomatoes
3 oz. of goat cheese
8 eggs
Directions
First place your chopped turkey bacon in a skillet, on medium high heat. Add in the olive oil and saute until the bacon is crispy! Then add in your mushrooms, and tomatoes. Once the mushrooms are fairly cooked, add in your fresh spinach and saute until it is cooked down. Add the ingredients to your baking pan.
In a large mixing bowl, whisk the eggs. Feel free to pour in a half of cup of milk if you wish. It is not required, but optional. Pour the eggs on top of the ingredients in the pan and gently stir a bit. Then top the ingredients with crumbled goat cheese.
Preheat your oven to 350 degrees and bake the ingredients for 15-20 minutes, or until the egg bake has set. Here’s a helpful hint… try shaking the pan a bit. If the eggs do not move, then you are good to take them out!
I love that I was able to purchase everything I needed for this recipe at my local Walmart. I found International Delight Simply Pure Creamer in the refrigerated Dairy section.
