With summer quickly approaching, I’m in “Must Get Swimsuit Ready” Mode! Plus I have a BIG event later this month where I want to look my best (more on that later!). So I’ve switched to clean eating these past few weeks, and started preparing more keto-friendly meals. This means I tend to stick to a low carb diet, but still enjoy GOOD carbs such as non-starchy vegetables. Now I’ve created and shared a cauliflower pizza on the blog before. But this one was a HIT when I prepared it over the weekend and share it with one of my health groups. I love Caprese salads, so I was decided to create a pizza inspired by its mozzarella-tomato-basil goodness!

Cauliflower Crust Pizza #Recipe

One of the changes I’ve made is cutting back on carbs. Now I treat myself to brown rice past every so often, so I completely haven’t eliminated carbs… However I’ve discovered ways to replace carbs in some of my favorite meals, including pizza. Yes, you read right. I said PIZZA. Thanks to my new food processor, I’ve been able to make my own pizza at home, using cauliflower as the crust! Below I’ve included a step by step tutorial on how to use cauliflower to make your own delicious pizza.

When I’m in a scramble to create dinner at times, I admit, I sometimes run through the drive-thru or order a pizza. Time is huge issue with me in trying to prepare a dinner and spend time with my family after a long day at work. Luckily I’ve been find more and more recipes to create a deliciously scrumptious dinner, and not spend most of the night slaving away in the kitchen.
One of those dishes is Thai Chili Shrimp Pizza! This pizza combines many tastes that I most certainly enjoy… Thai peanut flavoring… spicy chili pepper… delicious shrimp… and of course, PIZZA! Best part? You can make this meal in 30 minutes or less.
