Know what movie comes out today? The Lone Ranger! As I’ve mentioned before, lately I’ve been inspired in the kitchen to cook with southwest flair and ingredients. Hopefully by now you’ve already taken a look at my recipes for Southwest Jalapeno Tacos and Cowboy Cheesy Pie. As I mentioned before, I’m lucky enough that my Best Friend Forever is quite talented when it comes to crafting recipes that fit perfectly with my new found love of southwest cooking.
A few weeks back we made these Sweet & Spicy Chicken Fajitas that I can’t help but want to share with you! This fajita mix is the perfect combination of both sweet citrus flavors and spicy peppers that give you that kick.
Ingredients
3 clementines
2 apricots
2-4 habaneros
2 jalapenos
1 lemon
1 lb cubed/cut up chicken
1/2 cup of water
At least 1 tbsp of lime juice
Dash of Red Cayenne Pepper
2 shots of tequila
Directions
Now keep in mind this is a very spicy dish. We used both jalapenos and habanero peppers. If you would like it not as spicy, simply replace the habanero peppers with jalapenos. This will help reduce the heat. Also I should mention that we used tequila (2 shots worth) in this recipe.
Now let’s not jump ahead of ourselves to the tequila portion of the recipe. Try to resist sipping on the deliciousness. We’ll need that for later!
First you want to cut up your clementines, apricots, and habanero peppers. Slice them, dice them, however you want them in your fajita mix. It’s really up to you. We have a tendency to leave the apricots into larger chunks rather than dicing them
Once you have everything cut up, place them in a bowl with your 1 tbsp of lime juice. Feel free to add more if you so desire. It’s all about the flavor you prefer! Let the fruit soak in the juice for a bit.
While you are waiting for your fruit to marinade, place an empty sauce pan on your stove top over high heat. It’s important to let the pan heat up first. Take your lemon and cut it into 4 quarters. Once the pan is hot, add in your chicken to cook. Once you see the chicken start to cook, add in your lemon quarters and stir. This is a great way to cook the chicken in lemon juice and flavors. Be sure to toss the lemons after the chicken is done cooking! They aren’t for consuming! Turn the heat down, add in your 1/2 cup of water and cayenne pepper. Add in chopped jalapenos (optional!). Cover the chicken leaving the lid to crack a bit. Let it all simmer. Don’t forget to stir every so often. You just want the chicken to absorb the pepper flavors.
In another pan, you’ll want your fruit cooking on a low to medium heat. Feel free to adjust to your stove top’s settings. Add in those 2 shots of tequila! Let the fruit absorb the alcohol. Feel free to add in more lime juice to taste. Let them cook for a bit, but still stay tender.
Once everything is done, combine the fruit, chicken, and peppers together to create your fajita mix!! You can eat the mix alone, or wrap it up in a flour tortilla.
