The first time I heard a word about Monsters University, I was more than thrilled! I loved Monsters Inc. and couldn’t wait for another Sully and Mike movie. I knew Disney would have another classic on their hands. Luckily for me, my son shares the same love of these silly and fun Monsters.
In anticipation for the June 21 release of Monsters University, I decided to make Sully & Mike Cookies! Altering my coconut snowball recipe, with a few adjustments, I was able to create deliciously fun cookies to represent our favorite Monsters University characters.
Ingredients
Bag of sweetened shredded coconut
1 cup all-purpose flour
1 1/4 cups confectioner’s sugar
pinch of salt
6 tablespoons softened unsalted butter
1 teaspoon vanilla extract
green and blue food coloring
candy eyes
milk
Directions
First preheat your oven to 350 degrees. Take a half cup of the shredded coconut and chop it up super fine, or at least as fine as you can. Mix it in a bowl with the flour, 1/4 cup of the confectioner’s, and a pinch of salt. Then add in the butter and vanilla extract and mix. Now here is the part I admit is more on the difficult side. I add in a little milk, but I do actually just eyeball it. I mix in a little milk in at a time until it has the consistency of cookie dough. Next roll dough into 1-inch balls, and place the dough balls 1 inch apart on an aluminum foil covered baking sheet. Then go ahead and bake the for 15 minutes until they are firm, but tender. Let the cookies cool completely on a cooling rack.
While the cookies are baking, place an amount of shredded coconut into two separate ziplock plastic baggies. Take your food coloring and add a few drops in the baggie with the coconut. Each bag should be one color. Start out with just 2 or 3 drops in each. Shake the bag and massage the color into the coconut. Make sure that ziplock is sealed! You can either add more drops to make the color darker or add more coconut to make the color lighter.
Then in two bowls, add a half cup of the confectioner’s sugar with 2 teaspoons of milk each. Stir until the mixture is smooth, but thick. Add a drop or two of a color into each bowl. You should end up with blue glaze, blue coconut, green glaze and green coconut.
Dip the cookies into the glaze (make sure it drips down the size!) Then dip the cookie into the desired colored coconut. Add one candy eye if it’s green to represent Mike or two candy eyes if it is blue for Sully! Set aside to let the glaze dry.
Once the glaze is dry, you’ll have a batch of super cute Sully and Mike cookies! These are perfect for Monsters Inc viewing party, or a pre-show Monsters University snack.
These cookies were an absolute HIT with my son! If you have kids, you will definitely see a smile on their face once they recognize these Disney/Pixar favorites!
