Spring officially starts tomorrow! In honor of its arrival, this weekend we made Springtime Birds Nest Cupcakes. They were just too easy to make, I couldn’t resist sharing this recipes with you.
Ingredients
Batter mix and required ingredients
Frosting
Shredded coconut (sweetened if possible)
Candy (malt) eggs
Directions
First simply make your batter of cupcakes. I used Pillsbury Funfetti mix to give the treats that colorful pop! Make sure you pick up the other required ingredients for your batter. For instance, Funfetti requires 3 eggs, 1/3 cup of oil, and water.
While your cupcakes are baking, grab the shredded coconut. Now there are several ways to coconut. My preferred way to just to toast it on the stove top in a pan. Place the pan with enough coconut to top your desserts over medium heat. Be careful though! Sweetened coconut can heat up and burn real fast. Make sure you stir constantly too. Remove from heat once toasted.
Once your cupcakes are done, go ahead and frost them. I like to use plain vanilla whipped frosting. Make sure you coat the cupcakes evenly for a nice clean look.
Since i used the Funfetti kind, it came with fun pastel sprinkles. I went ahead and sprinkled those on top before adding the toasted coconut. This is completely optional. Then it is time to go ahead and sprinkle the coconut on top. You can somewhat form the coconut into a nest, leaving a little dip in the middle to hold the eggs.
Final Cupcakes
Now that your cakes are generally finished, it’s time to add the “eggs” to the “nest!” I used malt “Robin Eggs” that are usually available during the Easter holiday season. They add a nice little candy crunch to goodies.
