With the arrival of Spring, I was recently inspired to make on of my favorite Spring-themed desserts… Springtime ‘Bird Nest’ Cupcakes! They are very simple to make, and the bird nest theme is just so cute. It’s an easy way to create a dessert that is not only aesthetically pleasing to the eye, but won’t take much time in the kitchen!
Ingredients
Cupcake mix
Vanilla Frosting
Unsweetened Shredded Coconut
Candy Eggs or Jelly Beans
Directions
First simply make your batter of cupcakes. I used Funfetti mix to give the treats a colorful pop! Make sure you pick up the other required ingredients for your batter. For example, my cupcakes required eggs, oil, and water.
While your cupcakes are baking, let’s work on the coconut aka “nest.” Place the pan with enough coconut to top your desserts over medium heat. Be careful though! Sweetened coconut can heat up and burn real fast. That is why I use Unsweetened. Make sure you stir constantly too. Remove from heat once toasted.Once your cupcakes are done, evenly cover the tops with the vanilla frosting. Then sprinkle the toasted coconut on top. You can somewhat form the coconut into a bird nest, leaving a little dip in the middle to hold the eggs. I used malt candy eggs, but jelly beans work too.
Serve and enjoy! Don’t forget to add fresh Spring flowers to your tablescape for that Springtime touch.

These are so cute! My Mom does something similar with green dyed coconut, jelly beans, and chenilles to look like Easter baskets.

These are a fun idea. My only concern is that the eggs may not survive long enough to make it to the nest. Scavenger kids and parents love to prey on unattended “eggs”.
