Now that summer is approaching, I’m all about the foods that are on the lighter side, rather than the heavy comfort cuisine popular in the winter. So right now I’m all about making those salads! Today I’m sharing with how to make a delicious Spicy Chipotle Chicken and Ranch Salad, as inspired by Litehouse Foods and their line of salad dressings. I love to use Litehouse Homestyle Ranch in this dish, but if you are not a fan of ranch, you can opt for Litehouse Chunky Bleu Cheese dressing instead. Both pair well with the spicy chipotle chicken!

Now if you are were like me, you grew up reaching for that bottle of room temperature dressing in the condiment aisle. But did you know there is actually a more delicious way to dress your veggies? As I mentioned above, summer time is almost here… which means it is salad season! Who doesn’t love fresh veggies, delicious fruits and warm nights, spent enjoying outdoor meals with family and friends? I know I certainly do! I love making my guests this Spicy Chipotle Chicken and Ranch Salad. Plus since I use Litehouse Homestyle Ranch, I know that it helps this meal just burst with flavor, making it something more real, more delicious.

Litehouse Homestyle Ranch
First take your chicken breast and marinade it in the hot sauce of your choosing. Add in chipotle pepper season or rub. Now I like to use the thin chicken breasts, where I can bake them for 20 minutes at 375 degrees in the oven. Slice the breast or chop into cubes for the salad.
I like to mix both spinach and argula together. Of course you can pick any lettuce of your choosing. However I found that combination goes quite nice with the rest of these ingredients. Dice the tomato and red onion into smaller bits appropriate for the salad. I usually buy my black beans in a can, so go ahead and drain and rinse. Grab some shredded cheese and get your dressing ready!
The salad is light enough with it’s ingredients, but the chicken serves as a great protein and creating a more filling meal. The ranch and chipotle flavor pair perfectly to give you a fabulous Southwest inspired summer salad.
