As a busy working mom is I could wish for anything, it would be MORE TIME! Okay, it may be for a $100 billion dollars, but more time is up there. However, since the universe does not work that way, and more than 24 hours in a day is impossible, I’ll settle for life hacks, short cuts, and quick and easy recipes. Lately my friends and I seem to spend a ton of game day time watching college basketball. Given that I usually play hostess (and lack time), quick and easy snacks are right up my alley. This is exactly why I love Delimex® Mexican foods, easily found in the freezer aisle at Walmart! Serve them with a variety of delicious dips and sauces, and you’ve just spiced up your game day!
Over the years I’ve learn some fairly simple recipes that don’t take up much time in the kitchen! Not only are they easy to make, but that each provide a delicious pop of flavor. Some are spicy. Some are sweet. Then there are some that mix both the sweetness and spiciness! That is what I would like to share with you today.
I headed to Walmart to pick up a few game day snack necessities for our basketball viewing. While browsing the freezer aisle, I quickly spotted the familiar traditional Mexican offerings from Delimex®! Taquitos and rolled tacos are perfect for dipping into sauces and dips.Even, better, I had a Delimex® coupon on me! Now through April 7th, 2015, you can get $1 off on any two (2) Delimex® Frozen Taquito products (Excluding Fruit Taquito Products) at Walmart. Just click the coupon below to print one for yourself! Check out my tutorials below on how to create each of the three recipes: Spicy Pineapple Guacamole, Sweet & Spicy Fiesta Sauce, and Tejano Dipping Sauce. These are absolutely perfect to pair with Delimex® Rolled Up Tacos and Taquitos!
Spicy Pineapple Guacamole
2 whole avocados
juice from a lemon
1/2 cup finely diced onion
2 diced jalapenos
1 cup crushed pineapple, drained
2 teaspoons of hot sauce
Salt and Pepper to taste
Take your two avocados and slice them in half. Remove the pits. Spoon the “meat” of the avocados into a mixing bowl. Add in your onions, peppers, pineapple, and hot sauce.
You can easily use a fork to mash the ingredients until they are well combined. Add in the salt and pepper to taste (while mashing).
Now the lemon juice you added helps the avocado from turning brown. However, I highly recommend you serve the guacamole immediately!
I like to cut up and prepare the ingredients beforehand, and then cut the avocados and mix it all together right before my guests walk through the door.
Sweet & Spicy Fiesta Sauce
1/2 cup rice wine vinegar
1/2 cup white sugar
2 teaspoons salt
1 tablespoon chili garlic sauce
First you’ll want to stir the vinegar and sugar together in a small saucepan. Place over medium heat until the sugar dissolves completely. This usually takes anywhere from 7 to 10 minutes. Add in the salt, and then reduce heat to low. Let it simmer until the mixture thickens just a tad. This takes about 5 minutes. Once that is done, remove the mixture from heat and stir in the your chili garlic sauce. Mix it well!
Then allow your sauce to cool a bit before placing into a serving dish. I always felt that this dipping sauce tasted a little better when it was cooled.
Tejano Dipping Sauce
6 tablespoons of prepared thick taco sauce
3 tablespoons of honey
Combine the two sauce ingredients in small microwave-safe dish. Stir them well. Then microwave it on a high setting for 30 seconds or until warm. See? So simple!Place it in a serving dish that will keep it warm. This dipping sauce is best served at a higher temperature!
Once you have all your dips and sauces prepared, add them to your snack spread for your guests to enjoy! Add a cute sign to your dip display adds a fun element. Plus it is also a great way to tell your guests which dip is which.
