Lately with all the excitement for The Lone Ranger (which comes out next month), I’ve been inspired in the kitchen to cook with southwest flair and ingredients! Luckily for me, my BFF is talented in the culinary department and had a few new recipes he created that fit perfectly with my new found love of southwest cooking.
This recipe is for Southwest Jalapeno Tacos! If you love spicy food, you are going to love this jalapeno infused meal. It’s packed with delicious pepper flavor and the perfect Mexican ingredient: Dos Equis! FYI… you can obviously make the jalapeno tacos without beer (as it is cooked off eventually) for keeping it family-friendly.
Ingredients
One pound Ground beef or turkey
3 jalapenos
crushed chili peppers
2 tbsp red chili powder
2 tsp of black pepper
2 tbsp of salsa
1-2 bottles of Mexican beer (we used Dos Equis)
Directions
First clean and slice your jalapenos. Below you can see the best way to slice them up for the taco mix. Toss them into a bowl with just 1 tbsp of red chili powder, and 1 tsp of black pepper. Add in crushed pepper flakes to your liking.
Now we like our jalapeno tacos really spicy, so we are generous with the seasoning. Feel free to scale back on any of the pepper ingredients.
Pour in at least a half of cup of the Mexican beer to allow the pepper to spread around as well as marinate. The beer adds some delicious flavoring!
Now while the peppers are sitting in the mixture, place a medium saucepan over medium to high heat. Add in 1-2 tbsp of butter to your liking. As it melts, toss in your jalapeno mixture and stir. Add in another tsp of black pepper and another tbsp of red chili powder. Add in more crushed pepper flakes and beer at your discretion.
Turn the heat on your stove top down to low, and allow the jalapeno mixture to simmer for about 4 minutes. Remember to stir when you can!
In another saucepan, take your ground meat and took it thoroughly. Depending on which meat you are using, the length of time will vary. Remember to cook the meat longer if it is poultry!
Once your meat is finished cooking, add in the jalapeno mixture and stir. Mix the two together to create a delicious jalapeno infused taco filling.
Now that you have the filling for your jalapeno tacos, feel free to customize as you like! We used hard shells to help break up some of the spiciness. One trick we love, is to add shredded cheese to the bottom of the shells before throwing the meat on top. The heat of the shells and meat will melt the cheese right into the mixture. Add in toppings as you deem fit. We added shredded lettuce on top to again help break up the spiciness. Keep in mind, we mad this recipe super spicy. Feel free to use not all three jalapenos, or break down the pepper measurements in half.
