Now we certainly enjoy Little Bites® as they are… but did you know they also make a great ingredient in bread pudding? In honor of SMURFS: THE LOST VILLAGE, we recently used Entenmann’s® Little Bites® Smurf Blueberry Muffins to make ‘Smurfberry’ Bread Pudding! We are going to use blueberries as the “smurfberries” in this treat. Check out the recipe below…
Smurfberry Bread Pudding
4 cups of Entenmann’s® Little Bites® Smurf Blueberry Muffins
1 and 1/4 cups of milk
6 oz of fresh blueberries
1 teaspoon of vanilla extract
2 tablespoons of melted butter
Preheat the oven to 350 degrees. Take the muffins and either cut them up into smaller bits of crumble them. In a mixing bowl, beat the eggs lightly, and then add in the milk and vanilla extract to the mixture. Add in the crumbled cake. Then gently fold into the cake mixture your blueberries.
Pour the cake mixture into a smaller casserole sized baking dish. Usually a one quart size dish works fine. Then pour the melted butter over the cake mixture. Bake in the oven for 45 to 50 minutes so that the top is firm.
Once that is done… serve and enjoy your Smurfberry Bread Pudding!
