I’ve been experimenting a lot more lately in the kitchen. I’ve been trying to create healthier low-fat low-carb meals for both my son and I. Now cutting out carbs has been hard. Sometimes it is my weakness! What can I say… I’m a girl who likes her carbs. Sticking to a diet of just veggies and fruit hasn’t been working too well with me.
Luckily this is where MexAmerica and their line of products come in. I was super excited when they contacted me about some of their awesome products and how they can help me achieve meals that are low-carb, but also filling and satisfying in taste. I couldn’t wait to try MexAmerican Tortillas!
MexAmerica offers a wide variety of high quality products including flour tortillas, corn tortillas, wraps, chips, salsa, and spices! They generously sent me packages of their stone ground corn tortillas, their whole wheat tortillas with honey, and their fajita size flour tortillas. I was excited to read that their products were not only free of trans fat, but also high in fiber and protein!
What I love about their food line is how the offerings are low in sodium! I’ve been trying to reduce high sodium foods out of my diet, but it is amazing how many products I’ve discovered have such high levels. It is good to know that I can rely on MexAmerica to create a low sodium tortillas to use with my meals.
I first decided to try making a quesadilla with the fajita size flour tortillas. Okay, so I know quesadillas aren’t exactly the healthiest meals around. Though if you use the high fiber and low sodium products of MexAmerica, it definitely makes them better for you than other tortillas brands out there! I tried a few different combinations of ingredients. Eventually I created a Pepper Shrimp Quesadilla that I just loved making! Okay, it was more that I loved eating it so I made it several times. Now onto the corn tortillas. These are a great size for my son as they are smaller than the fajita flour tortillas. I used them to quickly make bean and cheese burritos when I’m on the run between work, errands, etc. You just zap the tortillas in the microwave for 10 seconds between two paper towels and it is easy to work with and roll.
Normally when I make my ground turkey tacos, I use hard taco shells. I replaced the shells with the corn tortillas when we had our last “Taco Tuesday” event in my home. I think they were even more delicious with the MexAmerica addition!
One of my son’s favorite snacks is sliced bananas and with a dab peanut butter. I decided to use the Whole Wheat tortilla with Honey to turn his snack into a lunch. Thanks to MexAmerica, this was very easy to do!
It’s easier to work with the tortillas if you heat them in the microwave for 10 seconds. Remember to place it between two paper towels while microwaving! Then I simply spread on the peanut butter lightly. Add the sliced bananas,and roll. Fold in one side and then the other. You can eat it like a wrap or burrito, but I usually take a pizza slier to cut it into small bites for my son. I’ve actually since made this a few times for myself as a snack!
I also used the Whole Wheat tortillas to make cinnamon sugar chips! A quick and easy way to do this is by placing the tortilla on a baking sheet. Brush on melted butter and then sprinkle cinnamon sugar to your liking. Take a pizza cutter and slice up the tortilla into chips. Bake for 10 minutes at 350 degrees (or until crisp), and then you are good to go and enjoy!

Overall I was very happy with the high quality tortillas created by MexAmerica. The fact that they are healthier and lower in sodium than other tortillas out there in the market is a very attractive feature. I look forward to creating new recipes with the products that MexAmerica has to offer!

it is so hard to find tasty low-carb wraps. my step-dad always complains they taste like cardboard. He follows a low carb diet for his health. He’s a stroke survivor, who shouldn’t have lived, but the damage was so severe that he can’t exercise. Shortly after he gained a lot of weight, and had to turn to his diet to lose it. So a low carb tortilla would be perfect for him as well as the rest of the family.
For me the corn tortillas would be nice to try, being deathly allergic to wheat has its drawbacks lol, but most corn tortillas out there are kind of yucky with no real flavor. plus I could make tortilla chips in the oven :) I will have to look for Mexamerica next time I’m at the store. we may not have them yet (we’re in SE AL), but I’ll keep my eye out.

These look yummy! I tried making my own tortillas that were healthier, and they were tasty but took FOREVER to make! I’ll have to check out this company! Looks like a great way to stay healthy and save some time!
