To my readers who are fans of math… guess what day is approaching? If you guessed Pie Day, then you are correct! March 14th marks “Pi Day.” While of course this pi is referring to the mathematical term of 3.14, but here at MommaRambles.com, we love to celebrate with the kind of pie that you eat. Today I’m sharing with you a recipe for my favorite kind of pie… lemon pie! Don’t worry if you aren’t a culinary genius. Thanks to Wholly Wholesome, this recipe is quite simple and easy to make.
Wholly Wholesome offers an assortment of desserts and frozen, all natural baked goods. This includes organic and gluten free pie shells, pie crusts, crumble cakes, pies, Belgian waffles and other baked goods with gluten free, kosher and yoshon certificates!
And now for the pie…
Ingredients
Wholly Wholesome pie shell
2 pkg. (3.4 oz. each) of lemon flavor instant pudding
2 cups of cold milk
1 tbsp of lemon juice
1 tub (8 oz.) of whipped topping, thawed
Directions
First take your Wholly Wholesome pie shell and let it thaw for 10 to 20 minutes. Use a fork to scrap the bottom of the crust as seen below.After you are done “pricking” the pie shell, make sure you preheat the oven to 375 degrees. Then go ahead and bake the unfilled pie shell in the oven for 10 minutes.
Then you’ll want place the two pudding mixes in a large bowl. Beat in the milk and lemon juice. Whisk the pudding for a good two minutes so that it thickens well. Then take out about 1.5 cups of the pudding, and spread it on top of the bottom of the pie crust.Next you’ll want to whisk half of the whipped topping into the remaining pudding. Go ahead and spread that mixture on top of the pudding layer that’s already on top of the crust.After that, top the pie with the remaining whipped topping. Try to smooth as evenly as you can. Here’s a hint… A spatula really helps! Now you’ll want to refrigerate the pie for at least 4 hours or until the pie filling is firm. Slice, serve, and enjoy your delicious lemon pie. My favorite pie is my mother in law’s” Italian Ricotta Pie” with sweet crust, mini chocolate bits and lemon rind mixed into the batter. Second favorite is my mom’s Swedish Apple pie. Both of these pies are to die for and easy to make!
