In case you haven’t been able to tell from the amount of Marvel themed posts on this blog… we are HUGE super hero fans in this household, especially my little one! Lately he’s been all about the show Marvel’s Avengers Assemble on Disney XD. While the show centers on the newest Avenger, Falcon, it still features all his familiar teammates such as Iron Man, Hulk, Black Widow, Hawkeye, Thor, and of course Captain America!
In an episode, I overheard Captain America talking about how New York City was his city, because as Steve Rogers, he grew up there with his Irish immigrant parents. Now I’m just going to admit it. I’m a girl who enjoys her food. Yes hearing one word can put food in my mind, just like how viewing a scene from THOR makes me want to eat a burger. So yes, I heard the word Ireland, and I had a sudden craving for Irish Soda Bread. Luckily I have an amazingly easy recipe to share with you…
So in honor of Captain America/Steve Roger’s family heritage, check out my recipe for Easy Irish Soda Bread! I promise, it really is that easy to make.
Ingredients
4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup softened butter
1 1/4 cup buttermilk
1 egg
1/4 cup melted butter
Optional: raisins
Directions
First you’ll want to preheat your oven to 375 degrees. Take a large baking sheet and lightly grease it. Then in a large mixing bowl, combine the flour, sugar, baking soda, baking powder, salt and the one cup of softened butter. Next you’ll want to thoroughly stir in 1 cup of the buttermilk (you’ll need 1/4 of a cup later) and the egg. If you decide to add in a handful of raisins, feel free! However, then your soda bread actually becomes a “spotted dog” loaf!
Once you’ve created the dough, lightly knead it on a floured surface. Next you’ll want to form the dough into a round to place on the baking sheet. Take the melted butter and the 1/4 cup of buttermilk and combine in a small bowl. Once the mixture is created, brush the liquid onto your dough evenly. Then take a sharp knife to cut an “X” into the top of the loaf.
Bake the loaf in the oven until a toothpick inserted into the center of the loaf comes out clean. This usually takes 45 to 50 minutes. Let the loaf sit for 30 minutes before slicing. If you like, you can continue to brush the loaf with the butter mixture while it bakes.
Some may choose to enjoy soda bread as a compliment to their dinner with a spread of butter. I particularly like to enjoy my soda bread with soups or stews. It’s great for dipping in and soaking up the any soup left in your bowl!
As for my son? He just enjoys a plain slice when watching his favorite Marvel super hero movies.
