I absolutely love that DOLE® is stepping up to the plate to help fight for healthier kids and families! This time they recruited the heroes of Disney•Pixar’s INCREDIBLES 2 to join, as part of Dole’s celebration of the film’s June 15 release. This INCREDIBLES 2-inspired initiative is part of Dole’s multi-year healthy-living alliance with Disney, created back in 2016. DOLE® believes that a diet rich in fruits and vegetables can increase America’s nutritional health and help reverse several negative health trends, such as improper diet and inadequate exercise.
Continuing the program, Powering the Hero Within combines a variety of INCREDIBLES 2 inspired breakfast, entrée, snack and drink recipes and useful healthy eating tips with colorful character images on millions of DOLE® Bananas and Pineapples in North American grocery stores!
Not only does the new DOLE® site offer INCREDIBLES 2 themed nutrition information and delicious recipes inspired by the film, but there there is also a portal that allows visitors to load and share photos depicting their families’ idea of healthy eating! What’s even better is that for each photo uploaded between now and September 15, 2018, Dole has committed to make a $2 donation to Action for Healthy Kids to support the national nonprofit organization’s work to build healthier families, communities and schools!! How INCREDIBLE is that? Under the organization’s motto “Every kid healthy, active and ready to learn,” Dole and Action for Healthy Kids hope to inspire people to become a hero for those around them.

Salad Power Wowser
A delicious sweet and savory salad that’s ready in minutes to “power up” the family.
Makes 8 servings
INGREDIENTS
- 2 cups Farro (cook to packet instructions)
- 1 cup DOLE Pineapple peeled and cut in cubes
- 1 cup DOLE Strawberries, hauled and cut into quarters
- ¼ cup balsamic vinegar
- 1 tablespoon honey
- 2 tablespoons of olive oil
- 2 tablespoons freshly chopped basil
- 2 tablespoons freshly chopped mint
- ½ cup goat’s cheese, crumbled
DIRECTIONS
- Place the cubed pineapple and strawberries in a small bowl, pour over the balsamic vinegar and honey, stir to coat. Allow to macerate for at least 15 minutes.
- To assemble, take a large salad bowl, spoon in the cold Farro stir in the chopped herbs, oil, and cheese, scatter over the pineapple and strawberries, (season to taste with salt and pepper, if needed) and serve.
Orange Super Smoothie
Be a healthy hero with this quick and tasty smoothie – it’s a ‘super’ way to start the day!
INGREDIENTS
- 2 ripe, medium DOLE Bananas
- 2 medium oranges
- 8 ounces lowfat Greek yogurt
- Dash of ground cinnamon and nutmeg
DIRECTIONS
- Peel bananas; slice into blender container or food processor.
- Peel oranges; cut into chunks.
- Add to blender with yogurt, cinnamon and nutmeg.
- Cover and blend until smooth.
Super Banana-Berry Boom!
For a sweet yet healthy treat that is sure to make dessert a blast.
Makes 6 servings
INGREDIENTS
- 2 tablespoons good-quality balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon mint leaves, roughly chopped
- 2 cups DOLE Strawberries, hulled and cut into quarters
- 2 cups DOLE Banana ice cream (see Nutrition breakdown for ice cream)
INGREDIENTS (Banana & Peanut Butter Ice Cream)
- 3 large DOLE bananas, peeled and sliced into even size rounds
- 1/4 cup smooth reduced fat peanut butter
DIRECTIONS
- Combine the balsamic vinegar, honey and 1/2 of the mint leaves in a bowl.
- Add in the strawberries and set aside at room temperature for 10 minutes to marinate.
- Place sliced bananas into a large ziplock bag, removing as much air as possible before zipping it closed and place in the freezer for at least 2 hours or overnight.
- Remove the bag from the freezer and tip the frozen banana into a food processor. Blend until smooth, scraping down every 30 seconds, until the banana looks like soft serve ice cream (this may take 3-4 minutes).
- Add the peanut butter into the blender as soon as the banana looks like soft serve ice cream, blend together then store ice cream in freezer until needed.
- To serve, divide strawberries among 6 small bowls, then top each with a scoop of banana ice cream and sprinkle over the remaining mint leaves to garnish.
Summer Super Slaw
Start your summer strong with this simple twist on a classic coleslaw salad
Makes 8 servings
INGREDIENTS
- 1 cup cooked bulgur
- 1pkt DOLE Classic Slaw kit (try new slaw kit)
- 4 cups red or yellow cherry tomatoes cut into halves
- 1 cup coarsely chopped fresh mint
- 1 cup coarsely chopped fresh parsley
- ½ cup extra virgin olive oil
- ¼ cup fresh lemon juice
- ½ teaspoon red pepper flakes
DIRECTIONS
- Toss bulgur, DOLE Classic Slaw kit, tomatoes, mint, parsley, oil, lemon juice, and pepper flakes in a large salad bowl to combine (season to taste with salt and pepper if needed) and serve.
Incredible Power Flower
Be a healthy hero at the next summer BBQ! This simple grilled dish is a super favorite with the family, and tasty way to eat more fruits & veggies.
Makes 8 servings
INGREDIENTS
- 1 DOLE Cauliflower, cut into 4x 1 inch steaks
- 1/2 DOLE Pineapple, peeled and cut into 4 even size rings
- 2 tablespoons olive oil
- 1 DOLE BBQ Slawsome Kit (6oz)
DIRECTIONS
- Prepare grill for medium-high heat
- Brush each cauliflower steak with even amounts of olive oil, then sprinkle over the small packet of seasoning from the DOLE BBQ Slawsome Kit.
- Place the cauliflower steaks and pineapple rings onto the grill and cook for 5 minutes before carefully turning over each.
- Cook for another 5 minutes or until both the cauliflower steaks and pineapple rings are charred and tender, remove from the grill and keep warm.
Parr-fect Power-Up Cup
Power-up your day by drinking your veggies! This savory juice packs a nutritious punch.
INGREDIENTS
- 5 medium tomatoes, quartered
- 1 beet, cut in wedges
- 5 DOLE Celery Stalks
- 4 DOLE Carrots, trimmed with peel
- 1 medium cucumber, with peel
- 4 DOLE Green Onions, trimmed
- 1/2 red bell pepper, stemmed and seeded
- 1 lemon with peel
- 1 garlic clove
- 1 teaspoon Worcestershire sauce
- 1 teaspoon bottled horseradish sauce
- Salt to taste
DIRECTIONS
- Press tomatoes through juicer. Continue adding beet, celery, carrots, cucumber, green onions, bell pepper, lemon and garlic to the juicer. Stir in Worcestershire sauce and horseradish. Season with salt to taste.
- Serve or keep refrigerated in sealed jar until ready to serve.
- Note: Can use blender or food processor in place of juicer; add 1-1/2 cups water before blending vegetables.
Incredibly Crunchy Slaw
A sweet and spicy twist on a classic coleslaw that tastes incredibly delicious.
Makes 6-8 servings
INGREDIENTS
- 1 bag DOLE Mango Siriracha Slawsome Kit
- 2 cups DOLE Pineapple, peeled and diced
- 2 cups DOLE Strawberries, hulled and quartered
- 3oz packages of chow mein noodles, broken into bite size pieces
- 1 tablespoon green onions chopped
DIRECTIONS
- Take a large salad bowl and empty the slaw vegetables into the bowl along with the dressing, pineapple and strawberries, toss lightly together to coat.
- Sprinkle over the lo Mein noodles, sesame seeds and green onions, serve.
Power-Pop Breakfast Smoothie
Forget hitting snooze, you’ll be popping out of bed in the morning to get a taste of this fruity breakfast smoothie.
Makes 6 servings
INGREDIENTS
- 1/2 cup raw pecans
- 2 DOLE Bananas, peeled and sliced
- 1 cup DOLE Raspberries
- 1 cup DOLE Strawberries, hulled and cut into quarters
- 1 cup non-fat Greek yogurt
- 1 cup unsweetened Almond milk
DIRECTIONS
- Pre-heat the oven to 350’F.
- Toast the pecans in a frying pan on the stove top, cook for five to eight minutes or until crisp and aromatic.
- Remove from the stove and allow to cool, then crush to breadcrumb texture.
- Place the rest of the ingredients into a blender, and blend until smooth and thick, pour into six glasses and sprinkle over the crushed pecans, serve.
Pineapple Frozen Fireworks
Start summertime with a bang by enjoying these tasty pineapple popsicles.
Makes 13 servings
INGREDIENTS
- 2 cups DOLE Pineapple, peeled and flesh cut into cubes
- 1 cup unsweetened almond milk
- 8oz silken tofu
- 1 lime juice of
- 1/2 cup honey
DIRECTIONS
- Place all the ingredients into a blender, and blend until smooth.
- Pour into ice pop molds and freeze until solid, then serve.
- Can also be made with DOLE Strawberries or DOLE Raspberries.
Sweet Escape Slaw
You’ll never want to escape the dinner table when this sweet slaw is on the menu
Makes 4 servings
INGREDIENTS
- 1pkt DOLE Sweet Apple Slawsome Kit
- 2 cups DOLE Pineapple cut into cubes
- 1 cup DOLE Broccoli, cut into small florets
- ¼ cup DOLE Red Onion, peeled and sliced thin
- 2 tablespoons crushed pistachio nuts
DIRECTIONS
- Take a large salad bowl and empty the DOLE Sweet Apple Slawsome Kit into the bowl, along with the pineapple cubes, broccoli florets and sliced red onion.
- Pour over the dressing and seasoning, toss to combine.
- Sprinkle over the crushed pistachio nuts and serve.
- Can be served with grilled chicken, fish or shrimp.
Frozen Banana Blast
Indulge your super family with a sweet-yet-healthy treat that is sure to make dessert a blast.
Makes 6 servings
INGREDIENTS
- 3 large DOLE Bananas (very ripe speckled bananas)
- 3 tablespoons unsweetened cocoa powder
- 1/3 cup unsweetened almond milk
- 1 1/2 teaspoons vanilla extract
DIRECTIONS
- Slice bananas into coins and freeze until firm 1-3 hours or overnight.
- Add all ingredients to food processor or strong blender. Pulse until combined and then blend until smooth, making sure sides are scraped 1-2 times to ensure ingredients are well combined and without lumps, approx. 4 to 5 minutes.
- Enjoy right away as soft serve or store in freezer safe container for a “hard” ice cream.
Terrific Take-off Sweet Toast
Take-off for your day with this tasty toast, loaded with fresh berries and Greek yogurt.
Makes 4 servings
INGREDIENTS
- 4 slices whole wheat bread or seeded bread, toasted
- ½ cup non-fat Greek yogurt
- 1 cup DOLE Raspberries (or Blueberries)
- 1 tablespoon honey
- 2 tablespoons unsalted pistachios, crushed
DIRECTIONS
- Spread the yogurt evenly over the toasted bread, place on equal amounts of raspberries, drizzle over the honey and sprinkle over the pistachio nuts and serve.
Snack-Snack Attack
This portable pick-me-up really packs a punch! A sweet and filling snack for super kids and their super parents.
Makes 4 servings
INGREDIENTS
- 2 tablespoons tahini
- 1 tablespoon honey
- 1/4 teaspoon ground cinnamon
- 4 tablespoons reduced fat peanut butter
- 4 slices whole wheat bread or seeded bread, toasted
- 1 medium DOLE Banana, peeled and sliced
- 1/2 cup DOLE Blueberries
- 1/2 cup DOLE Pineapple, peeled and cut into cubes
- 1/2 cup crispy brown rice cerea
DIRECTIONS
- Place the tahini, honey, and cinnamon in a small bowl and stir to combine.
- Spread the peanut butter on the toasts and top with the sliced bananas, blueberries and pineapple.
- Drizzle with the tahini mixture and sprinkle with crispy brown rice cereal.
Super Power Parent Pasta
No superhero-loving child can resist the delicious power of this savory vegetable pasta.
Makes 4 servings
INGREDIENTS
- 8oz orecchiette pasta
- 6oz package of DOLE Baby Spinach
- 1/4 teaspoon freshly ground black pepper
- 1/2 lemon juice of
- 4 oz. nonfat cottage cheese
- 1 Tablespoon freshly grated parmesan cheese
- 2 cups DOLE Asparagus
- 2 cups DOLE Button Mushrooms
- 2 tablespoons olive oil
- ½ cup loosely packed fresh basil leaves
- 1 tablespoon toasted pine nuts
DIRECTIONS
- Pre-heat grill to medium-high.
- Cook orecchiette to packet instructions; drain, reserving ¾ cup pasta cooking liquid.
- Return the pasta, cooking liquid and spinach to the saucepan and stir to combine, season with black pepper, lemon juice, cottage cheese and parmesan.
- Place the asparagus and mushrooms into a bowl; pour over the oil and gentle toss to coat.
- Place the asparagus and mushrooms on the grill and cook for 3 to 4 minutes, until charred and tender.
- Remove from the grill and roughly chop the mushrooms and asparagus into 1 inch pieces, add to the pasta, toss lightly to coat.
- Place the pasta into four warm bowls, and top with basil leaves and pine nuts.
Berry Brave Incredi-Bowl

INGREDIENTS
- 1 cup DOLE Blueberries (freeze overnight)
- 1 medium size DOLE Banana
- 1 tablespoon unsweetened almond milk or water
- 1 tablespoon smooth reduce fat peanut butter
- 1/2 teaspoon vanilla extract
- Optional toppings: 1/2 cup DOLE Raspberries, 1/2 cup DOLE Strawberries, hulled and cut into quarters, 1 teaspoon crushed mixed nuts
DIRECTIONS
- Blend all the ingredients together until smooth, then pour into 2 breakfast bowls and top with raspberries, strawberries and crushed nuts.

Being lactose intolerant, I love all of these “ice cream” recipes made from bananas! I love fresh fruit in the summer . . . it’s so refreshing and delicious. I really want to try that first salad because it sounds like a great light dinner or lunch for the hot months.
