DOLE®’s Coco-Nana Birthday Cupcakes for Mickey’s 90th Birthday Celebration ~ #Mickey90

On November 18, we celebrated 90 years of Mickey Mouse! It was on that day, 90 years ago, that Mickey made his animated film debut in STEAMBOAT WILLIE. To celebrate Mickey’s birthday, you might have noticed that we shared a photo on social media of of the Coco-Nana Birthday Cupcakes, created by DOLE® in partnership with Disney for their Powering the Hero Within campaign! Today I’m sharing with you the actual recipe!

Ingredients

1 1/2 cups all-purpose flour
1 cup honey
1 teaspoon baking soda
1/8 teaspoon salt
3 medium ripe DOLE® Bananas, mashed
1 large egg
1/3 cup olive oil
1 teaspoon vanilla extract
1/3 cup dairy-free coconut whipped topping
24 DOLE® Banana Dippers, slightly thawed

Directions

First you’ll want to preheat oven 375°F. Line large muffin cups with paper liners. Place all the ingredients (except for the Dippers and whipping topping) into food processor or blender.

Then blend until smooth. Fill muffin cups one-half full. Bake 18 to 22 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes; remove from pan to a wire rack to cool completely.

Spoon a rounded teaspoon of whipped topping on each cupcake, place 2 banana dippers on each side of whipped topping.

Then you are done and the cupcakes are ready to serve! Sure Mickey’s birthday may have come and gone, but isn’t any day a great day to celebrate Mickey and Disney? I sure think so!
