With a growing toddler, I’m always on the look out for fun dinnertime ideas. I recently made these Chili Mac Cheese Pies for him and they were such a hit! I just knew I had to create this recipe and share with you all here on the blog. I mean, it has 4 items my son loves: Bread, pasta, cheese, and meat. Plus it’s super easy!
Ingredients
Can of Chili (we buy Hormel Turkey with No Beans)
or Half pound of lean ground beef with 1 teaspoon chili powder (or half a packet)
1 1/4 cup of small macaroni
1 cup shredded cheddar cheese
1 can (16.3 oz) Pillsbury Grands biscuits
Directions
First preheat your oven to 350 degrees. Now if you have a can of chili, just heat that in the skillet over medium heat. If you have lean beef, cook that in the skillet over medium heat for 7 minutes. Pour in 3/4 cups of water and the chili powder. Turn to low heat and let simmer for 5 minutes. Once the meat is cooked (whether ground or from can), sprinkle in a half of cup of cheese and stir.
While you are heating the meat, you can also boil a 1 and 1/4 cup of macaroni pasta. Now I cook this much so I have some leftover. You may only need one cup. It’s really up to you. Once the pasta is done, mix it together in a bowl with the meat!
Now open up your Grands. Separate the dough into the 8 biscuits. Flatten out each biscuit so that it forms a cup in your ungreased muffin tin. Make sure you press firmly on the bottom to make sure the biscuit fills each space. Allow at least a 1/4 inch rim above the tin.
Fill each biscuit cup full of the pasta meat mixture. Take the rest of the cheddar cheese, sprinkle on each pie making sure the pasta is covered. Then fold over the rim to cover the cheese. Keep in mind, while you bake these pies, pasta on top that make harden from the heat. It’s best to make sure it is covered by the biscuit and cheese.
Bake it in the oven for 20 minutes or until cheese and biscuits are golden brown. Let it cool at least 2 minutes before removing. Use a knife to help loosen the edges while you remove the pies from the muffin tin. Serve and enjoy!
These make a delicious snack or have a couple for dinner! We plan to serve them at our next house party as a heavy hors d’oeuvres. One tip, if you think the pies might be too savory for you, buy the Honey Grands biscuits. It adds a little bit of a sweet taste. That’s exactly how my son likes me to prepare them!
