Today, July 10th, is National Piña Colada Day!
Don’t worry, if you can’t make it to the beach, you can still indulge in this refreshing tropical cocktail. A piña colada is the perfect way to relax and enjoy a little bit of summer where you are sitting on a white sand by the ocean, or stuck up in a cold snowy mountain retreat. The taste just screams “Relax! It’s Summertime!”
So I don’t sound like a lush, I’m going to make this post educational. History Lesson: Piña coladas originated in San Juan, Puerto Rico! The name means “strained pineapple” in Spanish.
What National Piña Colada Day post would be complete without a recipe?
Ingredients
- 1 cup pineapple chunks (freshly cut!)
- desired amout of light (clear) rum
- 1 cup unsweetened coconut milk or cream
- 1/4 cup ice cubes
- 1 banana (optional)
- Pineapple wedges/cherries/oranges, for garnish
Simply toss the pineapple chunks, coconut milk or cream, rum, ice, and if desired, a banana, into a blender. Puree until smooth. Pour and serve! You can add the other fruits as garnishes. I like to add an orange slice on the side and a cherry on top of the drink. Enjoy!
