All opinions and thoughts expressed are 100% my own.In the past two months I’ve taken an initiative to eat “better” and exercise more, along with other life improvements. I will have to write another post more in detail of my journey, but I’m happy with the weight loss I’m experiencing.
One of the changes I’ve made is cutting back on carbs. Now I treat myself to brown rice past every so often, so I completely haven’t eliminated carbs… However I’ve discovered ways to replace carbs in some of my favorite meals, including pizza. Yes, you read right. I said PIZZA. Thanks to my new food processor, I’ve been able to make my own pizza at home, using cauliflower as the crust! Below I’ve included a step by step tutorial on how to use cauliflower to make your own delicious pizza.
Ingredients
1 small head of cauliflower, cored and cut into florets
1 large beaten egg
1 1/2 cup of shredded mozzarella cheese
3 tablespoons Parmesan cheese
Pizza seasoning
tomato sauce and shredded mozzarella for topping
Directions
First you’ll want to preheat the oven to 425°F. Cut up your head of cauliflower into florets. You can toss the stems. No need for those!Place the cauliflower into a food processor. I used my brand new Brieftons Food Chopper! You will then want to pulse the cauliflower until it’s the consistency of rice. If it feels a little wet, that’s alright.Now spread the riced cauliflower onto a greased baking sheet. You can also use parchment paper on the baking sheet if you wish.Bake the cauliflower for about 15 minutes. You’ll wait it to be tender and just a tad of brown around the edges.
Place the cauliflower in a large mixing bowl. Add in your egg, 1 1/2 cups of mozzarella cheese, and the Parmesan cheese. Mix the ingredients together well. This will create a “dough” like consistency. It will feel a little sticky!Grease a baking sheet with nonstick spray. Place your cauliflower “dough” onto the baking sheet and form it into the crust of the pizza. I like to shape it into an oval.Press the dough down so that it is about 1/4 inch think. Place the cauliflower dough back into the over for another 10 minutes. You’ll want the crust to be lightly browned, and crispy around the edges.
Take the crust out and lightly spread your desired amount of tomato sauce. Add any optional desired toppings and sprinkle an amount of mozzarella cheese to your preference.Place the pizza back into the oven until the cheese is melted and starting to brown. This usually takes about 5 to 7 minutes. Let the pizza cool before serving and enjoy!
