With summer quickly approaching, I’m in “Must Get Swimsuit Ready” Mode! Plus I have a BIG event later this month where I want to look my best (more on that later!). So I’ve switched to clean eating these past few weeks, and started preparing more keto-friendly meals. This means I tend to stick to a low carb diet, but still enjoy GOOD carbs such as non-starchy vegetables. Now I’ve created and shared a cauliflower pizza on the blog before. But this one was a HIT when I prepared it over the weekend and share it with one of my health groups. I love Caprese salads, so I was decided to create a pizza inspired by its mozzarella-tomato-basil goodness!

It’s no secret that my family and I are beyond excited for the upcoming release of Marvel Studios’ AVENGERS: INFINITY WAR! The action, the stories, the mix of drama and comedy… Marvel films are some of the best! Plus as mom, I actually can really relate to the Avengers and Guardians. Just like the superheroes, parents like me can find themselves in daily epic battles too… such as the battle to make better food choices for our families, especially with meals that include fresh fruits and vegetables. AVENGERS: INFINITY WAR will arrive in theatres next month! April 27 will be one TITAN of a day! Anyone else counting down? My family and I couldn’t be more excited!! The “Marvel Conversation Game” has become a daily occurrence in our household. Pretty much everyone takes turns asking each other Marvel questions. My son is obsessed! Now if I could just get him to stop asking me which characters I think will not survive for AVENGERS 4 *sadface*. But let’s think HAPPY thoughts! Like delicious Marvel-themed recipes!
