As a mom, I want my son to enjoy foods that are on the healthier side. Lunch is always challenge because I wouldn’t exactly count the snacks my son wants as “better” for him. Luckily there are ways I can incorporate whole grains not only into his diet, but into mine as well. Luckily helps with that… specifically with creating my new favorite kind of turkey melt.
Since my son loves sandwiches for lunch, we always have bread in our household. Sometimes it is hard to find whole grain bread that is both on the nutritious side, and has great taste. This is where Arnold® Bread comes in. Not only is their bread fluffy and delicious, but there is 23 grams of whole grains per slice!
Arnold® Whole Grains 100% Whole Wheat Bread has quickly become one of our favorites, especially since it has a hearty 3g of fiber and is only 100 calories per slice. This bread is absolutely packed with wholesome goodness that the whole family will enjoy. The bread is the perfect thickness for all the grilled cheese sandwiches my son has been asking me to make this winter season.Grilled cheese isn’t only for the kiddos though! Sometimes this momma wants a more “sophisticated” kind of sandwich for herself! Now I love turkey sandwiches. Recently I started adding berries into those sandwiches. I mean, I eat cranberries with turkey at Thanksgiving… so why not enjoy berries with turkey more often!
Berry & Goat Cheese Turkey Melt
Ingredients
Arnold® Whole Grains 100% Whole Wheat Bread
Turkey (lunch meat style)
Fresh Raspberries
Crumbled Goat Cheese
Fresh Spinach
Butter
If you wish, you can substitute the raspberries with strawberries or blueberries. I have made this sandwich with those type of berries as well.
Directions
First grab a pan that you will use to grill the sandwich, and add some heat to it on the stove top. The the butter and slather it on one side of each slice of bread. Place both slices in the pan, with the butter side down. Let it “grill” a bit.
Then you’ll want to add on the crumble goat cheese of one slice of bread, and then place the berries on top of the cheese. On top of the other slice, add your turkey, and then the spinach on top of that. Proceed to carefully place one of the slices with ingredients on top of that other, so that your sandwich is formed. Continue to carefully flip the sandwich so that each side is “grilled” and the cheese starts to melt into the other ingredients.
Once the sandwich is complete, slice, server, and enjoy!
