With winter here, in this household, we need warm, hearty dinners! Nothing is more filling and warms you right up than a good stew. One of my all time favorite French dishes is Beef Bourguignon… which is more than just your average beef stew. I always make mine in the slow cooker, and what really gets me while it simmers, is the pleasant savory aroma! And maybe the fact that I have red wine to enjoy while waiting. Check out my tutorial for Beast’s Beef Bourguignon, a recipe inspired by Disney’s upcoming live action romance classic BEAUTY AND THE BEAST, based on the French fairytale. This dish is absolutely perfect to cook for your favorite “Beast,” if he is a “meat and potatoes” kind of guy (or gal!). It’s a nice meal for “Date Night In!”
Ingredients
2 tablespoons of olive oil
1-2 lbs of beef, cut in cubes or large chunks
1 bundle of fresh sage
2 cups of beef broth
2 cups of red wine (Pinot Noir)
2 tablespoons of chopped garlic
1 yellow onion (diced)
6 carrots (peeled and chopped)
1 lb of Mini Gold potatoes (cut into quarters)
8 oz of mushrooms
6 strips of bacon (cooked and chopped)
2 tablespoons of tomato paste
Thyme for seasoning
Salt & Pepper for seasoning
Directions
The first step I take in preparing the dish is browning the beef. Season the meat with salt and pepper, and then toss in a large saute pan with the olive oil. Cook the meat until it is brown on all sides. Once that is done, gather the rest of your ingredients for the slow cooker.
I like to place the meat in the bottom of the pot, with the bundle of sage then on top. Then throw in your tomato paste, with the mushrooms, bacon, onions, garlic, potatoes, and carrots all mixed together on top. Then pour in your beef broth, and then the red wine!
Shake the thyme season on top, and cover the slow cooker. Let the mixture heat on low for at least 8 hours. Once the Beef Bourguignon is done cooking, add more seasoning if desired.
Please keep in mind, while most of the red wine does cook out of this dish, you may want to keep it for adults only.
The chunks of beef with the vegetables, seasoned with thyme, is just beyond tasty! This really is such an easy French dish to make as the slow cooker does most of the work for you. Brown the beef, chop some veggies, and you are good to go… you are now a French chef so to speak! That looks really good! I’m going to have to find some meatless steak replacements and give this a try. I know it’s not the same, but that sauce… I have to try this.

I was just suggesting to another person who commented that a meatless option could possibly be large chunks of Portobello mushrooms instead of beef? And then use a vegetable stock instead too. :)
