Last week I discussed how I had found an awesome dinner solution for when I was short on time, but still wanted to create a delicious dinner. Dinnertime is no longer a hassle thanks to Barber Foods Breaded Stuffed Chicken Breasts. Plus their new and improved recipe (and packaging) has the chicken even crispier, and tasting better!
Sometimes dinner time can be a struggle with my four year old, but no complaints from him when I serve a stuffed chicken breast! He’s loving juicy and tender chicken thanks to the new recipe, and always goes straight to the filling. His favorites is the Cordon Bleu that has a mix of savory ham and melted blend Swiss and American cheeses inside. Also because I’m not spending time pounding out and stuffing the chicken, I get to spend more time with him. Dinner only takes 30 minutes to cook! Barber Foods has several stuffed chicken breast options available in addition to the Cordon Bleu, including Broccoli Cheese, and Chicken Kiev. These flavor combinations are absolutely delicious!
Just remember, when cooking the stuffed chicken breasts, you’ll want to make sure you cook it to a temperature of 165°F. This will ensure that the chicken is safe to eat. Cooking your chicken at this temperature is not only for safety reasons though. You’ll want the filling to melt into a Swiss and American cheesy-gooey goodness! While the chicken is certainly the star of the meal, I can’t serve a complete dinner with the perfect side dish! The Stuffed Chicken Breasts offered by Barber Foods pair perfectly with my creamy garlic Parmesan rice and feta green beans.
Creamy Garlic Parmesan Rice
4 tablespoons of butter
1 tablespoon of minced garlic
1 cup of uncooked rice
1 cup of water
1 cup of milk
½ teaspoon of salt
1/3 cup of grated Parmesan cheese
½ teaspoon of parsley
In a medium size saucepan, saute the garlic in butter over medium heat for about 3 to 4 minutes. Go ahead and add in the rice and stir well to make sure the rice is coated by the butter.Next you’ll want to add in your water, milk and salt. Bring the mixture to a boil.Then you’ll want to reduce heat to low. Let the mixtures stay at a slight simmer. Cover the pot, and cook the rice for 20 minutes or so, or until the rice is tender. Make sure you stir occasionally so that the rice does not stick to the bottom. Next add in the Parmesan cheese and parsley. Now completely turn off the heat, and place the cover back on. Let the rice rest for about 5 minutes. Once those minutes have passed, go ahead and serve the rice!
Feta Green Beans
4 cups of green beans, trimmed
1/2 cup of toasted chopped walnuts
1/4 cup olive oil
1/2 cup of crumbled feta
Freshly cracked black pepper

I never thought about putting a hot dog in green beans to give it flavor. That’s really a great idea. I love the way you made them throughout. The dinner looks yummy.
