If you regularly read my blog, you know I’m a huge fan of and the variety of products they offer. Right now I’m all about serving Arnold® Whole Grains Sliced Breads and Arnold® Sandwich Thins® Rolls at lunch time! Luckily, my son agrees with me that this is a delicious way to incorporate more fiber and whole grains into our diet.
My son just loves sandwiches for lunch! Bread is a staple in our household. Though sometimes it can be hard to find whole grain bread that is both on the nutritious side, and has great taste. This is where Arnold® Bread comes in. I love that these breads/rolls contain 2 to 5 grams of fiber per slice or thin, and have zero grams of Trans Fat as well as no high Fructose Corn Syrup! You can’t go wrong with a cholesterol free food!
Now while my son loves the traditional Arnold® Whole Grains Sliced Bread (which are only 80 calories per serving!), he is loving the Sandwich Thins®. Our favorites are the Honey Wheat and Multi-Grain!
Lately we’ve been trying to incorporate more vegetables in our diet. While don’t get me wrong, we still love a good ole fashion PB&J or ham and cheese sandwich… But check out our tutorial for this Portobello and Pesto Caprese Sandwich. Delicious! Portobello & Pesto Caprese Sandwich
Ingredients
Arnold® Bread Sandwich Thins
Portobello mushroom cap (marinade with Balsamic vinegar)
Pesto
Tomato (sliced)
Spinach
Fresh mozzarella (sliced)
Directions
First go ahead and prepare your portobello mushroom cap to your choosing. I like to pour balsamic vinegar on top of it, and bake it in the oven at 400 degrees for 10-15 minutes. This gets the mushroom really packed with flavor and juicy.
Once that it done, gather your ingredients, and get ready to create some sandwich art! Or just create a really super delicious sandwich *grins*.
Now let’s take your Sandwich Thins (which are already pre-sliced), and add the pesto. You don’ t need a lot, but adding pesto to both halves adds just the right amount of flavor.
Once the pesto is evenly spread on each half, it’s time for the portobello mushroom cap. Gently place it on the bottom half of the sandwich.
Now it’s time to add your slice of tomato and fresh spinach. Feel free to add more than one slice! Sometimes I add two just for kicks (and because I love tomato!).
Then top your sandwich off with a slice of fresh cut mozzarella! You can drizzle a little balsamic vinegar on top if you wish.
Add the top half of the Sandwich Thins, and there you go… a delicious Portobello and Pesto Caprese Sandwich. So simple, so good.
This sandwich can be served either warm or room temperature. Cutting in half is recommended, as the sandwich can be quite thick!

“Fueling Good” (these sandwiches should incorporate ingredients that help boost your energy such as healthful fats, protein, fiber and iron)
“State Favorites” (whether it’s a well-known sandwich in the state you reside, or a must-have local dish that can transition into a sandwich, celebrate your state pride by re-creating these state favorites with better-for-you ingredients)
The recipe in each sandwich category with the highest score will receive a $5,000 category prize. Entries will be accepted through August 21, 2016. The online consumer voting will take place September 26 – October 23, and the winners will be announced on National Sandwich Day- November 3.
Arnold® bread will donate one (1) loaf of bread (up to 100,000 loaves) to Feeding America for each valid entry submission during the entry period and vote received during the online voting phase of the “2016 America’s Better Sandwich” Contest.
